Maplewood, Missouri’s Special Business District has been named the nation’s 1st Green Dining District. The designation comes from the Green Dining Alliance (GDA), a restaurant sustainability certification program of St. Louis Earth Day. The GDA works with restaurants to reduce their environmental impact by completing an on-site audit that evaluates all areas of operations, and by setting personalized goals with each Member. Green practices include reducing, recycling, and composting restaurant waste; operating facilities with efficiency; and sourcing sustainable food, to-go ware, and cleaning supplies. The evening will begin with a brief presentation about GDA certification at Schlafly Bottleworks. Attendees will then enjoy all that this walkable district has to offer via a crawl of the GDA establishments.
OBJECTIVES:
- Explain the Green Dining Alliance (GDA) restaurant sustainability certification program.
- Learn how GDA restaurants reduce, recycle and compost restaurant waste.
- Investigate procedures used by GDA restaurants to source sustainable products and operate their facilities with efficiency.
- Explore restaurants in the nation’s first Green Dining District.
